Ingredients
  

  • 4 medium leftover baked potatoes, diced
  • 1 lb cooked ground beef or turkey
  • 1 cup sour cream
  • 2 cups shredded cheese
  • 2 tbsp butter
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Layer diced potatoes, cooked meat, and shredded cheese in a baking dish.
  • Mix sour cream with garlic powder, salt, and pepper, then spread over the top.
  • Bake for 25-30 minutes until bubbly and golden.
  • Serve warm as a main dish or side.

Notes

You can substitute the ground beef with turkey for a lighter option.
Add some vegetables like spinach or bell peppers for extra flavor.
Make it vegetarian by omitting the meat and adding extra cheese or beans.
For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
